“Cream” of Broccoli Soup

A couple of weeks ago I asked you, dear readers, to contribute recipes, reviews, or whatever favorite vegan tidbits you so desired. My good friend, Lisa, promptly emailed me 14 of her favorite vegan recipes. I will be sharing these over the next several months. She assures me they are simple recipes that taste great, and I have no doubts. I have had the pleasure of dining at her home several times over the past few years including Thanksgiving 2007. A recipe from Lisa’s kitchen
“Cream” of Broccoli Soup
Serves: 2

2 cups chopped broccoli , fresh or frozen
2 cups water
Pinch of each (or more to taste):
–salt
–black pepper
–powdered sage
–dried thyme
–garlic powder
2 tablespoons quick-cooking oatmeal
1/2 cup soymilk

Place all ingredients except soy milk in a medium saucepan and bring to a boil. Lower heat and simmer 5-7 minutes.

Puree in blender. Stir in soy milk and serve.

Makes 2 servings.
Preparation time: 15 minutes

  1. mmm…looks like my type of soup! I think I’ll be making this soon as I love all and every creamy soup :)

  2. This sounds great! One thing I never put into my cream of broccoli soup is oatmeal, and it makes perfect sense in it!
