A couple of weeks ago I asked you, dear readers, to contribute recipes, reviews, or whatever favorite vegan tidbits you so desired. My good friend, Lisa, promptly emailed me 14 of her favorite vegan recipes. I will be sharing these over the next several months. She assures me they are simple recipes that taste great, and I have no doubts. I have had the pleasure of dining at her home several times over the past few years including Thanksgiving 2007. Enjoy and happy cooking!
2 cups chopped broccoli , fresh or frozen
2 cups water
Pinch of each (or more to taste):
2 tablespoons quick-cooking oatmeal
1/2 cup soymilk
Place all ingredients except soy milk in a medium saucepan and bring to a boil. Lower heat and simmer 5-7 minutes.
Puree in blender. Stir in soy milk and serve.
Makes 2 servings.
