Christine - you've clearly infiltrated my consciousness because I inadvertently made a vegan meal for dinner last night (I'm not even vegetarian, never mind vegan) and it was really good. I admit that the serving of virtue on top of my dinner helped!

It would be great if you could share recipes with us that don't require specialty vegan products like seytan (sp?) or vegan cheese. Perhaps just the sort of things one might throw together from the ingredients you might already have in the larder?

Hi VegansRule! I can teach you to cook. Call me or email me if you're interested: itseasybeingvegan@gmail.com or 773-340-YOGA. Also, there are some cooking schools that have on occasion offered vegan cooking classes. There are more vegetarian classes though. I learned to make seitan at Cooking Fools in Wicker Park. You might also try: The Wooden Spoon in Andersonville and The Chopping Block in River North and Lincoln Square. I also took a Thai cooking class (all vegan) at Heat & Spice Cooking School. Only one other student showed up, so it was practically a private lesson. Let me know if I can help. Thanks for always reading!
