Where do you live? I live in Savannah, GA
How long have you been vegan? I have been a vegan for 6 months, since January 2012.
Wake up: I try to get up at seven, but lately I’ve been getting up between 10 and noon because of the crazy hours I was working as a Production Assistant on a fashion shoot.
Breakfast: What I eat for breakfast depends on when I get up. I have made Alicia Silverstone’s scrambled tofu from The Kind Life the last two mornings and I adore it. Other times, like this morning, I make a toasted sandwich with whole grain bread, lots of Veganaise, romaine lettuce and Tofurky. Yum.
Morning activities/work: I try to spend my mornings writing fiction, but this morning I found myself procrastinating by surfing the web.
Lunch: If I get up late I tend to skip lunch and go straight from breakfast to dinner. If I wake up at an appropriate time I eat a vegan soup from the tin. I love Muir Glen Organic split pea soup, but haven’t bought it for a while. Otherwise I cook an easy recipe from a cookbook or eat leftovers. Yesterday I ate Quinoa with Basil and Pine Nuts and Scarlet Roasted Vegetables. These were leftovers from an evening of cooking I had this week, which resulted in enough food to feed a family!
Afternoon activities/work: In the afternoon I write non-fiction, market my writing and surf the Internet and read. Recently I’ve been skipping this routine to hang out with my friend after she finished work and do some shopping.
Dinner: I always go for variety for dinner. If I’m feeling tired or lazy I’ll stick a ready-made vegan Amy’s meal in the over. I just tried the roasted vegetable vegan pizza, which was extremely tasty. If I have more time and the interest I will grab one of my vegan cookbooks and search for a recipe that I can make depending on the ingredients I have in the kitchen. This is often the difficulty I have – I don’t normally have all the ingredients I need in order to cook. If this happens continuously I make a point of writing a list and going shopping in the next few days so that I can cook. In the last week I’ve been working my way through week 1 and 2 of The Kind Life Superhero recipes. So far my favorite recipes have been Scarlet Roasted Vegetables and Steamed Kale with Ume-Sesame Dressing, which I eat at most every meal even though it is suggested for breakfast.
After dinner activities: After dinner I read, watch a movie, surf the Internet, hang out with friends or hang out with my brother’s family. Last night I wanted to celebrate my Scottish culture and watched Brave in 3D before heading over to feed my brother’s dogs.
Lights out: I set an alarm on my phone for 10:30 to remind myself to go to bed. This way I can avoid finally looking at the clock and realizing it’s 2am. I have night owl tendencies, but my life improves if I get to sleep before midnight. Last night lights out took place at 2am. It’s a process. Every day I start again.
Favorite Cause/Current Project: I am currently involved in writing for The Under 35 Project created by Lodro Rinzler in collaboration with Shambhala Publications. This months topic is starting and deepening your meditation practice.
Favorite animal or vegan book? The Kind Life by Alicia Silverstone.
Favorite animal or vegan movie? I’m a sucker for Finding Nemo.
What’s the best part of being vegan? I eat a lot better and a much better variety of food since becoming vegan.
What do you want people to know about living vegan? No matter how much you eat you never get that horrible full, tired feeling that makes you desperate to unbutton your pants and lie down for a nap.
