What This Vegan Ate on Wednesday

October is VeganMoFo. My theme for the month is demystifying vegan food. Through a photo diary of my daily vegan meals, you will see what the average vegan really eats. Sometimes the food I eat may seem weird or unfamiliar but mostly you’ll find I eat food which is familiar — just without the animal products. It really is easy being vegan.

Food Notes

  • I add greens wherever I can even at breakfast sometimes, but I still think I need to incorporate more fruits and vegetables into my diet. It’s really apparent after photographing my food for the past 10 days.

  • I made the chickpeas in the pressure cooker just before lunch. After hearing a friend mention “blow up the kitchen” and “pressure cooker” in the same sentence, I was hesitant to learn how to use this tool. Now that I know how to use it, I find it cool to cook dried beans in less than 30 minutes.
  • The Tahini Dressing above can be found in The Saucy Vegetarian. This is one of my favorite recipe books. I use it a lot and highly recommend it for anyone who wants to make their own dressings and sauces. Check out the “I Can’t Believe It’s Not Cheese” Sauce recipe from this book that I posted during VeganMoFo 2011.
