October is VeganMoFo. My theme for the month is demystifying vegan food. Through a photo diary of my daily vegan meals, you will see what the average vegan really eats. Sometimes the food I eat may seem weird or unfamiliar but mostly you’ll find I eat food which is familiar — just without the animal products. It really is easy being vegan.

- I add greens wherever I can even at breakfast sometimes, but I still think I need to incorporate more fruits and vegetables into my diet. It’s really apparent after photographing my food for the past 10 days.

- I made the chickpeas in the pressure cooker just before lunch. After hearing a friend mention “blow up the kitchen” and “pressure cooker” in the same sentence, I was hesitant to learn how to use this tool. Now that I know how to use it, I find it cool to cook dried beans in less than 30 minutes.
- The Tahini Dressing above can be found in The Saucy Vegetarian. This is one of my favorite recipe books. I use it a lot and highly recommend it for anyone who wants to make their own dressings and sauces.
