Making Vegan Easy Week 13 Round-Up

Tip #85: Vegan substitutes made easy.

Check out these books for ideas. I promise you don’t need to use any animal products to make great tasting food.

  1. Skinny Bitch Book of Vegan Swaps by Kim Barnouin
  2. The Complete Guide to Vegan Food Substitutions: Veganize It! Foolproof Methods for Transforming Any Dish into a Delicious New Vegan Favorite by Celine Steen and Joni Marie Newman
  3. The Food Substitutions Bible: More Than 6,500 Substitutions for Ingredients, Equipment and Techniques by David Joachim

Tip #86: Use your words wisely.

You can eat meat, eggs and dairy but as a vegan, you choose NOT to. My word choices may seem picky, but when you say you can’t, unconsciously it feels restrictive. When you say you can but choose not to, you feel empowered. As a vegan, you will often hear from others, “Oh, you can’t eat that.” There’s no need to argue semantics with others but I will remind myself that I could eat it but choose not to and why. It helps.

Tip #87: Experiment with non-dairy milk substitutes.

Soy milk is an old vegan standby and I love it, but a lot of non-dairy milks on the market are giving soy milk a run for its money. There is almond, rice, hemp, flax, coconut and oat. The nutritional content is different for each one. Soy is high in protein. Almond is low-calorie. Check the labels and experiment to find your favorites. My new favorite is unsweetened, vanilla almond milk. It’s great in oatmeal and granola. What’s your favorite?

Tip #88: Shift the way you think.

You aren’t giving up cheese. Instead, you are giving up supporting animal cruelty. Even if you are kind to every animal you come in contact with, the dollars you spend on meat, dairy and eggs directly supports animal cruelty.

Tip #89: Worship the sun.

Make sure you get your vitamin D. Important for everyone—no matter what your diet. I get my level tested every year and take a daily supplement to make sure I’m getting enough, because winters in Chicago make it tough.

Tip #90: Be good to yourself.

Reward yourself for the changes you have made this year. It takes courage and discipline to change. Yay vegans!

Tip #91: Eat your beans.

Don’t be afraid of musical fruit. They are an excellent source of protein and fiber. If you are afraid beans will give you too much gas, read Dr. Gregor’s article about “clearing the air.” I bet it will make you giggle, and then check out this funny article for more laughs.

My Vegan Story

My vegan story was originally published over at Ready For Plan B. Peter is posting vegan testimonials from vegans everywhere. If you’re interested in submitting your story, read more here.

“I’m not going to give up cheese. And, I’m not going to wear ugly shoes,” I said to myself after reading a PETA newsletter cover-to-cover over 25 years ago. People for the Ethical Treatment of Animals changed my life.

The newsletter arrived just before Thanksgiving. I read it from front-to-back sitting in our wood-paneled family room in a yellow flame-stitched club chair with my tan-striped cat, Corky, cuddled on my lap. It’s 1985 in Evansville, Indiana. It’s a conservative town in a “red” state. Not exactly a hotbed for bucking the system. Raised to fit in, I’m your typical girl next door.

The PETA newsletter showcased at least a dozen black and white photos of animals in cages or on factory farms. The articles on animal testing included pictures of monkeys with electrodes attached to their heads and rabbits with gook spilling from their eyes. All staring out at the camera as if to say, “Help me.” Continue Reading →

Good-bye Eggs, Hello Tofu!

On Friday, Mercy For Animals released an undercover video from three Sparboe Egg Farms in Iowa, Minnesota and Colorado. Sparboe supplies eggs to McDonald’s. The video exposes egregious acts of animal cruelty. Watch for yourself.

Make the Connection

After the release of the video, McDonald’s announced it would stop using Sparboe as its egg supplier. OK, that’s nice but if anyone thinks this is the only egg farm committing these heinous acts of cruelty, they are madly mistaken. This certainly isn’t the first video of its kind, and it’s only a matter of time before MFA releases another undercover video from a different egg farm. The only way to stop this cruelty is to stop eating eggs and go vegan.

Tofu Scramble Rocks

Adjust your taste buds and eat tofu instead. Tofu scramble is an easy substitute for an egg breakfast. It’s easy to make and tastes great.
